Chili con Queso

• 1 large Onion, finely chopped
• 1 Tbsp Bacon Drippings
• 2 - 10 oz cans Tomatoes with Green Chillies, undrained
• 1 - 4 oz can Chopped Green Chilies, undrained
• 1 tsp Salt
• 1/8 tsp Pepper
• 4 cups Shredded American Cheese ( 16 oz)

Directions  

• Saute onion in bacon drippings in a large skillet until tender.
• Drain tomatoes, reserving juice and coarsely chop
• Add tomatoes, green chilies, salt and pepper to onion
• Add cheese
• Cover and cook over low heat, stirring constantly until cheese melts
• Thin cheese mixture to desired consistency using reserved juice, one tablespoon at a time
• Serve warm with tortilla chips
